'Polbo a feira' is a traditional Galician seafood dish which translates as 'fair style Octopus,' referring to it traditionally being served up in markets. It is a simple dish which only involves four main ingredients; fresh octopus, salt, olive oil and paprika. The octopus is bashed to tenderize the meat before cooking (traditionally by fisherman on the rocks of the coastline after being caught) and prepared by being dunked repeatedly into boiling water while cooking to make the tentacles curl. It is then cut into slices with scissors and seasoned with heavy sprinkles of salt, paprika and olive oil before eating.
